Heir to Parisian salons and floral fashions, the Ladurée house wanted to move closer to a fairer ecology with regard to its floral heritage by taking stock of the situation, intended to reinvent certain agricultural partnerships and propose new gastronomic stories.
Alongside the Executive Committee, the chefs and the house teams, Sixtine Dubly conducted an audit and produced a white paper. She supported the implementation of new sourcing and partnerships with French and local farmers using innovative methods, and assisted the chefs in reviewing the collections. The teams were trained in the new landscape, floral, agricultural, cultural, aesthetic, linked to the flower. This support for change was transmitted as methodology and content to the teams in Great Britain.
